W H I T E C U R R Y This will serve 7 Ingredients Coconut - 4 Raw papaya - 700gms Beans - 250 gms Basil - 6 leaves Seasoning Ginger - 15 gms Lemon leaf - 4 Root of Lemon grass - 1 Take out the coconut and add just enough water for a smooth mixture. Sieve this to separate coconut milk from the fibre. Grind the seasoning and dry roast with some water. Cut the veggies and keep for 10 minutes in a steamer. Remove and add to the seasoning, with coconut milk. Add salt just before serving. R E D A N D G R E E N P I Z Z A S Sour dough starter was used , to make these pizzas. R E D P I Z Z A 🥕🥒🌰 Whole wheat flour 250 gms Beetroot 250 gms We made a yeast starter at home from scratch, by mixing equal quantities of wheat and water and leaving this mixture outside for 3 to 5 days. The sweet smell in the yeast indicates correct fermentation process. Cut beetroot into pieces and with some water ,blend into a smooth paste. Make a pizza dough with starter and this paste. Leave for 30 to 60 minutes, for dough to rise. Then shape into a pizza base and leave for another 60 minutes for second rising. With kids camp, we didn’t do these steps and still the yeast made the dough soft and pliable. Preheat the oven to 180 and bake the pizza base for 20 minutes after giving a shape to it. Use the desired toppings. We used pumpkin, beans, carrots, olives ,capsicum cherry tomatoes and lotus stem. Except for olives, capsicum and cherry tomatoes, we steamed everything. It was such a delight to see kids add Lotus stem and Pumpkin as their pizza toppings. G R E E N P I Z Z A Whole wheat flour 250 gms Coriander 250 gms Blend the coriander with water into a paste and make the dough in the same way as red pizza. L E N T I L P A N C A K E S Recipie below ~ These pancakes are a good filler and make a great wrap or eaten as a sandwich ! I usually ferment the lentil after sprouting it overnight, to increase the nutritional content. In order to keep the meal light on the stomach, we avoid mixing grains or lentils ! Mono foods are quicker to digest, and nutrition absorption is far easier for the body! Recipie 🥕🥑🥒 Green Lentils / Moong Daal - 200 gms Coriander - one bunch For Filling - Carrot - 1 Capsicum - 1 Cashew For the Bottle gourd dumplings - Grated Bottle gourd - 1 Chickpea flour - 2 tablespoons Coriander powder Cumin powder Coriander Sprout the lentils, and grind them into a coarse mixture with less water. The consistency is more like dropping than pouring. Leave in sun for 2 to 6 hours , and check for fermentation. Meanwhile chop the carrots and capsicum lengthwise and steam them slightly. Make a dip with coriander and cashew and some salt and pepper and water. For dumplings, add chickpea flour and bottle gourd and seasoning and make small dumplings. Add to the steamer and steam for 20 minutes. Take off the heat and let it cool ,to firm up! Add chopped coriander into the lentils, and mix thoroughly. Grease the tava or pan with half a cut onion and add a drop of oil . Make a cheela or thick pancake ! Cover with a lid and wait for 7 to 10 minutes and flip ! It should leave the sides automatically before you flip. Make a wrap with adding the dip and the veggies and add the dumplings and roll.
